Avocado Boats with Microgreen Chicken Salad

A new take on a  classic with a sprinkle of greens! Our Avocado Boats with Microgreen Chicken Salad recipe is the comfort food dish you've been missing in your dinner line-up. The addition of our Mighty Micros to the chicken salad makes getting veggies in even easier (especially for kids), complete with creamy avocado. Perfect for summer nights and picnics!

Serves 4-6


3 cups shredded cooked chicken

¼ cup mayonnaise

3 tablespoons dijon mustard, or mustard of choice

2 teaspoons apple cider vinegar

½ red onion, minced

1 teaspoon honey (optional)

¼ teaspoon salt

½ teaspoon pepper

1 (2-ounce) package Forward Greens Micro Broccoli

2-3 ripe avocados, halved, pits removed

3 tablespoons chives, finely chopped, for garnish


  1. In a mixing bowl, combine the chicken, mayonnaise, mustard, vinegar, red onion, honey, salt, and pepper with a fork until thoroughly combined. Fold in the Micro Broccoli, reserving some for garnish.
  2. Fill each avocado boat with ⅓-½ cup of chicken salad.
  3. Finish with chives and remaining Micro Broccoli greens. Serve immediately.
