3 cups shredded cooked chicken
¼ cup mayonnaise
3 tablespoons dijon mustard, or mustard of choice
2 teaspoons apple cider vinegar
½ red onion, minced
1 teaspoon honey (optional)
¼ teaspoon salt
½ teaspoon pepper
1 (2-ounce) package Forward Greens Micro Broccoli
2-3 ripe avocados, halved, pits removed
3 tablespoons chives, finely chopped, for garnish
- In a mixing bowl, combine the chicken, mayonnaise, mustard, vinegar, red onion, honey, salt, and pepper with a fork until thoroughly combined. Fold in the Micro Broccoli, reserving some for garnish.
- Fill each avocado boat with ⅓-½ cup of chicken salad.
- Finish with chives and remaining Micro Broccoli greens. Serve immediately.
