Chicken Salad with Lemon Poppyseed Dressing

This bright salad is packed with flavor and filling enough to be a hearty lunch or even dinner salad. If you’re meal prepping for the week, refrigerate salad bowls with the dressing on the side. Between the creamy goat cheese, tangy dressing and savory chicken, this will be a salad you make again and again!


For the chicken:

¼ cup soy sauce

1 tbsp olive oil

1 tbsp lemon juice

1 sprig rosemary, leaves removed from stem and minced

1 tsp garlic powder

½ tsp kosher salt

½ tsp freshly cracked black pepper

2 chicken breasts


For the dressing:

½ cup freshly squeezed Meyer lemon juice (about 2 lemons)

¼ cup olive oil

1 tbsp poppy seeds

1 tbsp honey

1 tbsp Dijon mustard

½ tsp kosher salt

½ tsp onion powder

For assembly:

Forward Greens Fantastic Frill Blend

Crumbled goat cheese

Shredded carrots

Pepitas (green pumpkin seeds)


  1. In a medium-sized bowl, whisk together the soy sauce, olive oil, lemon juice, minced rosemary, garlic powder, salt, and pepper to make the chicken marinade.
  2. Place the chicken breasts in a gallon-sized zipper top bag or a large container and pour the marinade over them. Flip to coat. Refrigerate for 2-24 hours.
  3. When you’re ready to cook the chicken, it can be grilled or pan fried. To grill, preheat grill on medium-high heat for about 5 minutes. Add the chicken and grill until well browned on each side and completely cooked through, about 5 minutes on each side. To pan fry, add about 2 tsp olive oil to a nonstick skillet over medium heat. Cook the chicken breasts for about 4-5 minutes on each side, until browned and completely cooked through. Set aside to cool then slice into strips.
  4. While the chicken is cooking, make the dressing. Whisk together all ingredients and keep whisking until oil and lemon juice are emulsified and the mixture is slightly creamy in appearance.
  5. To assemble the salad, add your desired quantities of Fantastic Frill Blend, shredded carrots, and pepitas to a large bowl. Toss with your desired amount of dressing. Top with chicken slices and goat cheese and serve
