Everyday Buttermilk Ranch Salad

Everyday Buttermilk Ranch Salad

Yields: 12 ounces

The addition of pea shoots in this recipe makes for a lovely pairing! Super clean, powerful greens you have come to expect from us married with a luscious and creamy homemade dressing. If you’d like a smaller bowl of salad, feel free to cut the greens quantity in half. This is intended for an easy dish you could bring to your next family gathering, but be sure to make all this dressing! It’s so savory and delicious you will be able to enjoy with your greens and salad all week. Honestly, we think once you taste it, you’ll start craving this salad. Loaded with flavorful herbs and greens and this bright, creamy, dilly goodness, this salad will be a go-to in your rotation. Mix it up with textural elements like toasted seeds, nuts, roasted veggies or grilled meats, egg etc to make it an all-in-one meal. Final note: for the dairy products, the more organic and full fat the better – you’ll notice the difference!

1 package (4 oz) Forward Greens Bright Bok Choy Blend

1 package (4 oz) Forward Greens Splendid Spring Mix

½ cup fresh parsley, rinsed and torn

⅓ cup fresh chives, rinsed and cut at an angle

1 Tablespoon of fresh squeezed lemon juice

Flakey sea salt

Buttermilk Ranch Dressing

¾ cup Buttermilk

¼ cup Sour cream

¼ cup Mayonnaise

1.5 tablespoon fresh dill, chopped

½ tablespoon fresh chives, finely minced

1 teaspoon garlic clove, minced

2 tablespoon olive oil

¼ teaspoon himalayan sea salt

⅛ teaspoon Pepper, fresh cracked

  1. Prepare dressing by adding all ingredients to a food processor. If you don’t have a food processor, a blender will work fine on low. If neither of those, a bowl and a fork will also get you there! Mix until creamy and smooth. Taste test and adjust to your liking as needed. Pour into a mason jar or other airtight container and store in the refrigerator for up to 7 days.
  2. In a large bowl, toss together all the greens and herbs.
  3. Just before serving (and we mean *just*), drizzle 6oz (¾ cup) of dressing and gently toss to fully coat. Now is a great time to add any additional toppings if you’re going that route. Finish with a very light sprinkle of flaky sea salt, freshly cracked pepper and spritz of fresh lemon juice. Enjoy!

Bon appétit!
