Make Ahead Egg Bites

Makes 12 egg bites

Make ahead breakfasts make the whole week better. It’s one less thing to think about and you’re guaranteed something delicious each morning! These egg bites are full of nutrition and flavor. Feel free to make some ingredient swaps – this is a great way to use any veggies in your crisper! Just make sure to include the Micro Broccoli or Micro Kale for vitamins A and C to power you through your day.

Ingredients

1 ½ cups frozen tater tots or hash browns

12 strips of bacon

½ cup finely chopped onion

8 large eggs

½ cup milk

1 tsp kosher salt

½ tsp freshly cracked black pepper

1 cup shredded cheddar cheese

1 cup Forward Greens Micro Broccoli

Directions

  1. Preheat oven to 375 degrees F. Grease a 12-count muffin tin or line with silicone liners.
  2. Cook the tater tots or hash browns according to package instructions. Once cool, tear into small pieces with your fingers.
  3. Place a large non-stick skillet over medium heat and brown the bacon on both sides. Transfer to a paper towel lined plate. Keep 1-2 tbsp bacon grease in the pan and discard the rest. Once cool, crumble the bacon.
  4. In the pan with the bacon grease, saute the onion for 5-6 minutes, until softened.
  5. In a medium bowl, whisk together 8 eggs, 1/2 cup milk, salt, and pepper. Pour evenly between the muffin tins.
  6. Distribute the hash browns, bacon, onions, cheese, and Micro Broccoli evenly between the tins. Give each a small stir.
  7. Bake in preheated oven for 18-20 minutes or until puffy, browned, and no longer jiggly in the center. Cool a few minutes in the pan then serve or cool completely then add to a tupperware container and refrigerate.
